Spring Radishes!

This can be made with salad turnips instead of radishes if you aren’t into radishes.

2 bunches of radishes, thinly sliced

2-3 scallions, finely chopped

1/2 bunch cilantro, finely chopped (optional, but so, so good)

2 TBSP lime juice

1 TBSP olive oil

2 tsp maple syrup

salt and pepper

 

Mix all these ingredients together and let them sit for at least 20 minutes so the flavors get into the radishes. Serve as a side dish, on tacos, over a green salad, in sandwiches, in wraps, over breakfast eggs, etc. for an awesome, fresh, crunch!
