Kale Fritters

You can make this with any variety of kale, or chard, or really any green.

  • 1 bunch kale, stems removed

  • 1/2 cup cornmeal (or almond flour, or coconut flour)

  • 1 bunch scallions

  • 2-3 cloves garlic, crushed

  • 1/3 cup grated parmesan (or cheddar, or your favorite cheese)

  • 4 eggs

  • 1/2 tsp nutmeg

  • salt and pepper

  • high heat oil for frying

Blend everything (except the high heat oil) in a food processor. (You will need to do the kale in batches, and transfer the whole mixture to a big bowl to mix the batches well.)

Heat oil in a skillet. When the oil is hot, put a small pancake-like size of the mixture on the pan and let cook until brown on one side. Flip and press down so they are about 1/4-1/2 inch thick. When both sides have lightly browned remove onto a tray with paper towles to remove excess oil. Fry all the fritter batter and serve. Enjoy!
