Green Garlic White Bean Dip

You can make this with white beans or garbanzos. It’s really just a vehicle to enjoy fresh green garlic!

  • 1 cup dried white beans (soaked, cooked, strained, and cooled to room temperature

  • 3-4 stalks of green garlic, roots removed, chopped up into 1 to 2-inch chunks, use all green and white parts

  • 1 bunch parsley

  • 1/3 cup olive oil (or more)

  • 2 TBSP lemon juice

  • 1 tsp salt

  • black pepper as needed

  • optional pinch of coriander powder

Blend everything together until smooth. Add water or more olive oil to create your desired consistency. Enjoy!
