Green Garlic White Bean Dip
You can make this with white beans or garbanzos. It’s really just a vehicle to enjoy fresh green garlic!
1 cup dried white beans (soaked, cooked, strained, and cooled to room temperature
3-4 stalks of green garlic, roots removed, chopped up into 1 to 2-inch chunks, use all green and white parts
1 bunch parsley
1/3 cup olive oil (or more)
2 TBSP lemon juice
1 tsp salt
black pepper as needed
optional pinch of coriander powder
Blend everything together until smooth. Add water or more olive oil to create your desired consistency. Enjoy!
