Garlic Scape Pesto
1 bunch garlic scapes, thin tips removed, rest chopped into 2-inch chunks
1 TBSP lemon juice
1 TBSP water
1 tsp salt
1/3 cup sunflower seeds (or any nut or seed)
1/3 cup olive oil
optional: 1/3 cup grated hard Italian cheese (like parmesan, pecorino, etc)
Blend all the ingredients together until smooth, adding olive oil, lemon juice, or water to get the thickness you want. Serve over pasta, on sandwiches, in wraps, on an omelet, etc. We usually leave out the cheese and bump up the sunflower seeds and salt a little bit to replace the cheese.
