French Tomato Mustard Pie

This is a wonderful aromatic version of a tomato pie. You can make your own pie crust or use a pre-made one. I have also made this on a puff pastry crust, which makes it different, but fun.

  • 3 medium to large tomatoes, thinly sliced

  • several slices of swiss cheese

  • about 1/2 cup spicy brown mustard

  • 1-2 TBSP olive oil

  • 2 TBSP herbs of choice: thyme, oregano, basil, herbs de Provence

  • pinch of salt

Prebake the pie crust for about 10 minutes at 350. It doesn’t need to be fully cooked, just not raw. Spread the mustard on the bottom of the crust, place a layer of swiss cheese on the mustard, layer slices of tomatoes (make sure they overlap), drizzle olive oil on the tomatoes, and sprinkle with herbs and salt. Bake at 375 until crust has browned.
