Marinated Cherry Tomato Salad

This is such a divine summer treat, and great to have at any barbeque or picnic.

  • 2 pints cherry or grape tomatoes, sliced in half

  • 1 sweet onion, finely sliced into rings

  • 2 cucumbers, peeled, finely sliced into rounds

  • 1/4 cup olive oil

  • 1/2 cup vinegar (I use white white or red wine vinegar for this recipe, but rice, balsamic, white, and apple cider all work nicely)

  • 1 TBSP honey

  • 1 tsp salt

  • 1 tsp ground pepper

  • 1 TBPS finely chopped fresh thyme or oregano

Mix the olive oil, vinegar, honey, salt, pepper and thyme or oregano together in a bowl. Gently toss in the cherry tomatoes, sweet onions, and cucumbers. Cover and let marinate in the fridge for at least an hour. Any leftovers (there might not be any!) can put put in a wrap or sandwhich for a quick meal. Enjoy!
