Tzatziki
A favorite Greek dip that celebrates summer flavors…
1 pint plain yogurt
1-2 pickling cucumbers or 1 slicing cucumber, peeled, and cut into 1/4 inch cubes
1/2 bunch of parsley, finely chopped
handful of mint leaves, finely chopped
2-3 garlic scapes, very finely chopped (or crushed in a food processor) or 2 garlic cloves, crushed
1 TBSP olive oil
2 tsp lemon juice
1 tsp dried dill (or some chopped fresh if you have it!)
1 tsp maple syrup (optional)
salt and pepper
Mix everything together and serve with fresh veggie sticks or pita chips or on sandwiches or wraps. Enjoy!
