A favorite Greek dip that celebrates summer flavors…

  • 1 pint plain yogurt

  • 1-2 pickling cucumbers or 1 slicing cucumber, peeled, and cut into 1/4 inch cubes

  • 1/2 bunch of parsley, finely chopped

  • handful of mint leaves, finely chopped

  • 2-3 garlic scapes, very finely chopped (or crushed in a food processor) or 2 garlic cloves, crushed

  • 1 TBSP olive oil

  • 2 tsp lemon juice

  • 1 tsp dried dill (or some chopped fresh if you have it!)

  • 1 tsp maple syrup (optional)

  • salt and pepper

    Mix everything together and serve with fresh veggie sticks or pita chips or on sandwiches or wraps. Enjoy!
