Mild “jalapeño” poppers

Do you love jalapeño poppers, but your kids don’t appreciate the heat? Use green snack peppers instead! When I make this recipe, I use half jalapeños for those of us who want a little heat, and half green snack peppers. Just make the snack pepper version first, so you don’t accidentally get heat on those ones from working with the jalapeños!

  • 6 green snack peppers (or jalapeños)

  • 1/3 cup cream cheese, softened

  • 1 tsp garlic powder

  • 1/2 cup cheddar cheese, shredded

  • 1 scallion, finely chopped

  • 1/3 cup bread crumbs

  • 1 TBSP melted butter

  • Preheat the oven to 400°F. Slice the peppers in half lengthwise, and scoop out the seeds. Mix cream cheese, garlic powder, cheddar cheese and scallions. In a separate bowl, combine bread crumbs and melted butter. Fill the peppers with the cheese mixture, and cover the top with the buttery bread crumbs. Bake around 15-20 minutes until the top is golden brown. Enjoy!
