Italian Kale and Rice Fritters

This is a great recipe if you have a bunch of leftover rice in your fridge.

  • 2 cups cooked rice

  • about 1/3 to 1/2 bunch lacinato kale, finely chopped

  • 1 small onion, finely chopped

  • 1 garlic clove, crushed

  • 2 eggs

  • 1/4 cup bread crumbs, and more for coating

  • 2/3 cup parmesan, shredded

  • salt and pepper

  • 1/2 tsp oregano

  • tomato sauce

  • high heat cooking oil

Mix the first 9 ingredients together in a bowl. Make small balls with about 1/4 cup of the mixture. Roll that ball in bread crumbs to coat the outside. Heat the high heat oil in a frying pan, and then place the balls in the pan. Squash down to make them a patty when they are in a pan. Fry for a couple minutes on each side, or until golden brown. Flip, and cook the other side. Remove to a paper towel to soak up excess oil. Continue until the entire mixture is used. Dip in warm tomato sauce.
