Quick Pickled Watermelon Radishes and Carrots

Our kids love pickled snack, and this is an easy one to have in the fridge. I also enjoy them on sandwiches.

  • 2 carrots, thinly sliced

  • 3-5 watermelon radishes, thinly sliced

  • 1 small onion, thinly sliced

  • 1/2 cup rice vinegar

  • 2 TBSP lime juice

  • ! TBSP apple cider vinegar

  • 3/4 cup water

  • 1 tsp sugar (optional, not necessary)

  • 1 3/4 tsp salt

  • 1/2 tsp whole peppercorns

  • 1 tsp dried dill

  • 1/2 tsp dried oregano

If you have a mandolin or a food processor with a slicing blade, that makes slicing the veggies easy. Otherwise, cutting with a sharp knife and thin as possible is also great. Mix the sliced veggies together and then pack them into jars or tupperwares. Mix the rest of the ingredients together and pour the brine over the veggies to cover them completely in each container. Let them soak at least 15 minutes before enjoying. They keep well in your fridge for months. Enjoy!
