Pea Shoot Pesto

  • 2 bags pea shoots

  • 1 bunch garlic scapes

  • 1 cup sunflower seeds

  • 2 tsp salt

  • 2 tsp lemon

  • 1 1/2 cup olive oil

  • 1/4 cup water

Blend all ingredients together until smooth. Add additional olive oil, lemon juice, or water to achieve your desired thickness. This is fantastic on pasta, on seafood, as a spread on sandwiches, in egg dishes, in wraps, as a dip, or as baby food.
