Baked Delicata Slices

This is a super simple side dish to add to any meal.

  • 1 delicata squash

  • olive oil

  • salt and pepper

  • garlic powder

  • maple syrup

Cut the delicata lengthwise, and scoop out the seeds. (Wash, and toast them for a great snack if you are inclined!) Cut each half into 1/4 slices making lots of thin, half circles. (Delicata skin is thin and edible, so we leave the skin on.) Toss the slices in a bowl with just enough olive oil to lightly coat them, a very small amount of maple syrup (optional), and a small amount of salt, pepper, and garlic powder. (You can do this recipe just with olive oil and no other additions, because delicata is wonderfully flavorful on its own.) Lay the squash on a baking sheet and bake at 400 until lightly browned, flipping once halfway through.
