Daikon Dip

This dip is a delicious new addition to our life, thanks to a CSA member who described it to me. Below is the ratios we put together. We added a bunch of cilantro to the dip because we love cilantro, but she described it to me without it. We served it with crackers as an appetizer. She uses it as a spread on leftover turkey sandwiches after Thanksgiving. Enjoy!

1 small to medium daikon, cut into large chunks

2-4 garlic cloves

one 8-ounce block of cream cheese

(one bunch of cilantro, optional)

salt and pepper

Put the daikon and the garlic in a food processor, and blend until fully pureed. (If you are using cilantro, put it in with the daikon and garlic.) Add the cream cheese and blend until smooth. (We added a few splashes of plain yogurt to make it a little less thick, and to blend easier.) Salt and pepper as needed. Enjoy!
