Cucumber Limeade

We drink this all the time during cucumber season… Our kids love it, and it’s an awesome alternative to a nice, cold beer at the end of the day!

  • 2 large cucumbers, cut into large chunks (peels left on)

  • 3/4 cup lime juice (could be lemon juice if you prefer lemonade, or a combo of both)

  • 1/3 to 2/3 cup honey (we prefer it less sweet)

  • 10 cups of water

  • ice

  • fresh mint to garnish (optional)

Put the cucumber chunks in a blender or food processor with about a cup or so of the water and puree. Pour the cucumber mash into a fine mesh strainer over a large bowl and let all the liquid drip through. Slowly pour the remaining water over the cucumber puree, stirring as you pour the water through. Pour that cucumber infused water into a large pitcher, and stir in the honey and lime juice. (Keep letting the cucumber puree drip into the bowl, you will collect a fair bit more cucumber infused water that you can add to the pitcher later.) Taste and add more honey if you want it sweeter, lime if you want it more sour, or water if you want it less intense. Serve over ice with a mint garnish, and chill out in the shade.
