Cream of Kohlrabi Soup

Kind of a cream of broccoli flavor…

3 TBSP olive oil

2 small to medium onions, chopped

3-5 garlic cloves, peeled, whole

1 medium kohlrabi, outer peel removed, then cubed (or half a large kohlrabi…. about 3 cups)

1 can coconut milk

3 cups broth (veggie, chicken, beef, etc)

1 TBSP dried herbs (rosemary, sage, oregano, thyme… whatever you want)

salt and pepper

Heat the olive oil in a pot, and add the garlic cloves and onions. Fry up until they are lightly browned. Use a slotted spoon to remove the garlic and onions into a small bowl. Add the cubed kohlrabi to the oil, and saute for a few minutes. Add the coconut milk, broth, herbs, salt and pepper, and cook until kohlrabi is soft all the way through. Return the oily garlic and onions back to the soup pot, simmer on low, and blend everything together with an immersion blender or in a food processor or blender. Enjoy!
