Brussels Crowns and Sweet Peppers

Quick, simple, delicious side dish! Brussels crowns have the wonderful flavor of brussels sprouts, with the funciton of a cooking green. (And the leftovers are excelent in omelettes and sandwhiches. We usually make a double amount of this recipe at a time, specifically so we can enjoy it as leftovers as well.)

1 bag brussels crowns, chopped into fine ribbons

1-2 sweet peppers, core removed, chopped into thin strips

2 garlic cloves, crushed

1 small onion, chopped into fine strips

salt and pepper

olive oil

splash of lemon juice

Over medium heat, saute the brussels crowns ribbons, onions, and garlic in olive oil until the onions are well cooked. Add the sweet pepper strips, and cook lightly, removing from the heat before the peppers are fully limp. Add salt, pepper, and lemon juice to taste. Enjoy!
