Beet Lemonade

We make this recipe when we have “beet water” after boiling beets for another recipe.

  • 5 cups beet water

  • 3 cups water

  • 1 cup sugar

  • 1 1/4 cup lemon juice

  • ice cubes

When you strain your beets for another recipe, save the beet water. Stir the sugar into the hot beet water and let it dissolve. Let the sugary beet water return to room temperature and then add the lemon juice, water, and ice cubes. Serve cold.

Notes: The amount of beet water to regular water doesn’t really matter. Sometimes we make it with all beet water, and no additional water, making it “beetier.” Or if you don’t have 5 whole cups when you strain the beets, just add more water. Also, everyone likes their lemonade with a different level of sweetness to lemony-ness, to watery-ness, so adjust your sugar and lemon accordingly.
